Mercury occurs naturally in the environment and can also be released through industrial pollution. In water, it turns into methylmercury, which builds up in fish. Predatory fish like shark and swordfish occupy the top of the food chain and accumulate significantly higher levels of toxins through a process called bioaccumulation.
